UA Cossatot Students Field Trip to Mena
De Queen- Students in UA Cossatot’s Animal Science class recently toured Meatworks Butchery in Mena.
Meatworks Butchery is an artisan butcher shop that is part of a vertically integrated operation, which means the owners have possession of the animals from farm to table. The students toured the facility and watched several demonstrations. The owners, Tracy and Andy Youngblood in partnership with Lavonne and Greg Hickl, only raise grassfed livestock. The tour was given by Tracy Youngblood and Lavonne Hickl.
UA Cossatot’s Agriculture department also purchased a selection of beef, lamb and goat from Meatworks, which we will be cooked and prepared according to the training in safe cooking techniques they learned on the field trip. Students will also be processing a primal section of beef into retail cuts, which will be cooked and sold in luncheon fundraisers for the department.
Students on the field trip were: Katelyn Carver, Tanner Caudle, Michael Elizondo, Kane Graham, Tony Kassos, Bonnie Peppers, Josh Prowant, Marissa Robbins, Neil Simpson, Ryan Surber, Kyle Sweeney, and Tyler Young. The trip was facilitated by Kelli Harris, Agriculture Faculty and Valerie Stone, Advisor and Rodeo Coach.
